Is it possible to set / change the elevation of the ceiling?

I'm working on a project that will have a ceiling with cutout areas / slopes of varying heights, was just curious if there's a current known method for making that happen?

On the Documentation page you can download a tutorial called "Tutorial for sloping ceilings, roofs, dormers and more" that explains a lot of your questions...
