Help with vaulted ceiling
I used these instructions to create a vaulted ceiling:
1. Draw your room walls at the standard height. 2. Create a new level above the existing one. 3. Go to the new level and draw sloped walls that rise from the level below. 4. Adjust the "Height at start" and "Height at end" for these new walls to create the desired peak. 5. Uncheck "Show ceiling" for the lower level and "Show floor" for the upper level to create a seamless look. 6. Select "Display all levels" from the 3D View menu to see the sloped ceiling in the 3D view.
This worked perfectly, but only the first time. Subsequent attempts have left me with a flat roof hovering over the peaks of the sloped walls. What am I missing?

On the lower level uncheck both "Display ceiling" and "Flat ceiling only". On the upper level uncheck "Display floor" and "Flat ceiling only". That should do it.
If you have trouble with getting a nice alignment between walls: On the upper level do not join the sloped walls with the straight walls or do not use straight walls between the sloped walls. Make sure the sloped walls align with the outside of the lower walls. If you get an open space between the lower and upper level because there is no floor on the upper level: add the floor thickness as defined for the upper level to the height of the lower walls. This will extend the lower walls to the bottom of the sloped walls.
An alternative: don't use the ceiling options at all, uncheck them for both levels. Then use the Roof Generator plugin to create a nice roof. This roof has its own (sloped) ceiling. Roof Generator plugin v5.0

I had a similar issue, and after solving this one I wondered how to make a nice sloped ceiling for the vault interior: Create a room whose borders touch the interior surface of the walls. Use the "Generate Roof" plugin to create the sloped ceiling. Paste it into the "top" level and adjust the elevation.

Extend the room for roof generation a little outside the outer walls before generating. It gives you a roof where you can attach raingutters. It doesn't work for all houses but the generated roof is an object like all other furniture: you can resize it to get the same result.
Using the interior surface like you describe is great if you just want a ceiling. That comes in handy if you have a roof like I described that extends outside the exterior walls but you want a different ceiling fort the part inside the house and the part that extends outside the house. Just add this second roof at a little lower elevation for an interior ceiling. That hides the ceiling that extends outside the house so you can give different textures to the parts inside and outside the house.
