I'm not sure how I missed it before, since I was just copying an existing XML node called <observerCamera attribute="storedCamera">, but now I notice that my other cameras have a few more attributes: lens,x,y,z,yaw,pitch,fieldOfView. I added these to my new observerCamera nodes in Home.xml and it loaded just fine, so case closed.
